Current State: John Harvard’s Brew House

Future State: Corduroy

Located in the hotel and close to the base lodge and golf course, the current John Harvard’s Brew House would be a focus for remodeling in year two of operation. Renaming the concept as Corduroy nods to the beloved pattern of a freshly groomed ski terrain, yet also brings it the contemporary credibility indicative of restaurants found on Washington Street. This elevated, pub-inspired concept would be infused with a local vibe that appeals to golfers and the après ski crowd alike. A table side experience allows guests to indulge – The Beef on Weck Cart showcases slow roasted black angus beef that is shaved to order and served on an artisan weck roll with a colossal dill pickle, and Miller’s horseradish. Featuring loaded nachos, fresh salads, hand tossed artisan pizzas, kid friendly favorites, and frozen hot chocolate to satisfy a sweet tooth, this menu is well-rounded and sure to be well-loved.

Current State: Cabana Bar

Future State: Double Black Diamond Watering Hole

The Cabana Bar is currently only utilized in the summer, but we see a huge potential for this area to be activated year round as it is right above the golf course and pro shop for the summer and right at the base of the hill in the winter. Renaming the concept as the Double Black Diamond Watering Hole references the golf course name as well as ski difficulty levels, ensuring this space is designed with both guest types in mind. QR code mobile ordering will enable guests to order off a limited, but hearty food menu that draws from the main restaurant and is delivered right to their seats. A uniquely themed cocktail menu is complemented by shot skis and buckets for groups to enjoy, as well as a range of wine and beer options. The food and beverage menus will be seasonal to pair with Summer and Winter activities. Environmental improvements like additional TVs, great music, and heaters to keep warm in the winter will create a sought after ambiance that will create the buzz this space needs to draw people in and encourage them to dwell for longer.

New Offering: Room Service

To drive additional revenue, we propose adding room service via an in-room featured QR code that allows guests to order from a ghost kitchen pizza concept that we would develop a brand for as well as a limited menu from the main restaurant (currently John Harvard’s Brew House and reconcepted as Corduroy).
