We believe that the current McCarty’s Café is ready for a refresh and new branding. As a starting point, the café will offer breakfast, sandwiches, coffee, and grab and go items for easy access for guests that are starting their day or looking for a light bite to refuel. Utilizing QR codes and mobile ordering, it will be convenient for food and beverage to be grabbed at the turn. In collaboration, we can also explore a partnership with coffee company Tradecraft to develop a localized and elevated coffee shop experience, or even implement a licensed Starbucks location.
The Mountainside Grill transforms into the Foxfire Food Hall with an enhanced identity that turns the current cafeteria style dining experience into a more engaging environment. Just as the Foxfire trail has a straight path to the Holiday Valley Lodge, we want the ordering and transaction experience to feel like a clear path from start to finish. Looking beyond year one, we would like to implement frictionless self-checkout technology via Mashgin.
Currently, there is a table in front of the service windows where an employee takes orders and distributes the food. We recommend removing those tables and servicing directly from the windows to open up and optimize the space. The Pizza, Grill, and Bakery stations would be rebranded with proprietary identities as part of our partnership. Supplementing these stations is a robust salad bar as well as a dedicated grab and go area for pre-packaged items. Each station also features shelving with snacks and impulse buys on display.
We see the opportunity to make the T-Bar an exclusive, higher end experience. With a speakeasy feel, the beverage programming would be extensive in this space with a tapas-style menu. Additionally, depending on your direction, there could be an opportunity to develop the T-Bar into an exclusive space reserved for clients, donors, members, staff and other VIP guests similar to Parallax at Mammoth Mountain.
